Ginger Almond & Cashew Granola with Coconut Milk

How is Coconut Milk Made?
Inquiring minds wanna know! Here’s an excerpt from Trader Joe’s May 2012 “Fearless Flyer” that excolor-boxs how’s it’s made:
Combine equal parts of coconut meat and water and simmer until the mixture thickens and foams, then press through cheesecloth to produce a smooth, milky liquid. Voila! Coconut Milk. Ours is fortified with magnesium, calcium and vitamin D and rich in medium chain fatty acides, which serve as a ntural energy source. You’ll find it in half gallon cartons in our refrigerated case, curiously positioned near the diary milk. We’re selling Vanilla or Unsweetened in half gallon (64 ounce) cartons for $2.99 each, a great value, every day.
As you’ve probably heard, coconut milk is a great alternative to cow’s milk. And if you ever get tired of almond milk, it’s a great “change” from that too. It’s made with organic coconuts and Trader Joe’s sells it two ways: Vanilla and the Unsweetened, both rich and creamy. Use it in coffee, breakfast cereal and even baked goods! Read more.
Just the Clusters
Trader Joe’s Just the Clusters cereal line has other “flavors” too, such as Vanilla Almond Granola and Maple Pecan Granola. But my favorite for now definitely is Ginger Almond & Cashew Granola. So yummy I just had to share here in my blog. By the way, here’s a review I found about the same cereal that sheds some interest facts about the wholesome goodness contained within!
